  • 750 g boneless meat
  • 2 cups jasmine rice
  • 50 g ghee (clarified butter)
  • 350 g pumpkin pulp
  • 200 g onions

  • 2 teaspoons mustard seeds
  • 1 tablespoon cumin
  • 1 tablespoon barberries (small, tart dried berries)
  • 3 sprigs of fresh thyme
  • Imeretian saffron (a spice from marigold petals), turmeric, bay leaf

How to Cook Fluffy Azerbaijani Plov with Pumpkin and Meat

Wash the rice for the plov in cold water until the water runs clear. Place the rice in a saucepan, pour in two cups of cold water, and add the ghee (clarified butter).

Add one teaspoon of ground turmeric and a pinch of Imeretian saffron (a spice from marigold petals). At this stage, salt the rice to taste. You can prepare the ingredients without salt and add it when layering in the kazan (a large, heavy-bottomed pot, similar to a Dutch oven), but I prefer to salt in stages.

Bring to a boil, reduce the heat, cover tightly, and cook for 12 minutes. Remove from the heat and wrap the saucepan in something warm.

Bring the rice to a boil, reduce the heat, and cook for 12 minutes covered


Dice the onion and carrots into small cubes. Pour about 100 ml of vegetable oil for frying into a skillet, sauté the vegetables in the heated oil, then remove them with a shumovka (a slotted spoon or skimmer) and salt them.

In the same skillet, in the heated oil, add barberries (small, tart dried berries), mustard seeds, and cumin, then add the meat, cut into small cubes.

Fry the meat until golden brown, sprinkle with salt and pepper, and strip the leaves from the thyme sprigs.

After the meat, place the diced pumpkin in the skillet, also frying until golden brown. Salt it and sprinkle with a pinch of granulated sugar.

Place 2-3 bay leaves on top, cover tightly, and put it on the stove. Cook the plov with pumpkin and meat over low heat for 40 minutes.
