Welcome to a healthier take on a classic comfort food! Tefteli, or tender minced meatballs, are a beloved dish in many Eastern European homes. While traditionally they might be fried or simmered in a heavy sauce, this recipe offers a wonderfully light and healthy alternative: steaming. By steaming, we lock in all the natural juices and flavors of the meat and vegetables, creating meatballs that are incredibly moist and tender. Infused with aromatic spices and studded with colorful bell peppers, these tefteli are a guilt-free delight that doesn't compromise on taste.
Ingredients for Healthy Minced Meat Tefteli
- 650 g homemade minced meat (typically a mix of beef and pork)
- 1 onion
- 1 sweet bell pepper pod
- 50 ml ice-cold water
- 1 teaspoon ground paprika
- 1 teaspoon khmeli-suneli (a Georgian spice blend)
- 1 tablespoon dried sweet pepper
- salt, black and white sesame seeds, vegetable oil
- chili and green onion for serving
How to Make Healthy Minced Meat Tefteli
Place the chilled homemade minced meat in a deep bowl. Homemade minced meat usually consists of beef and pork with a small amount of fat. However, you can mix the meats to your liking and grind them in a meat grinder, choosing your preferred ratio. It’s best to use a grinder plate with medium-sized holes so the meat isn’t too finely ground.
Finely chop an onion or grate it on a coarse vegetable grater, then add it to the minced meat.
Clean a sweet bell pepper by removing the seeds, and dice it. Add the chopped pepper to the bowl.
Now, add the ground paprika, salt to taste, khmeli-suneli (a fragrant Georgian spice blend), and dried sweet pepper. You can add a little more or less of the spices—it’s a matter of taste.
Pour ice-cold water into the bowl. The water must be very cold; you can even place it in the freezer for a few minutes before cooking.
Mix the mixture thoroughly. To make the tefteli (a type of meatball) tasty and juicy, the meat mixture is often beaten or tossed from hand to hand while shaping the meatballs.
Form uniform tefteli, each weighing about 100g. The exact size doesn’t matter, as long as they are all roughly the same.
Grease the steamer rack with vegetable oil to prevent the meat from sticking during cooking.
Place the tefteli on the rack, leaving a little space between them.
Sprinkle with black and white sesame seeds and place them in a pot of boiling water, then cover the pot tightly.
Steam for 20 minutes without opening the lid. You can add a couple of bay leaves, a piece of celery root, or parsley root to the water to make the steam more aromatic.
Serve the healthy minced meat tefteli hot, sprinkled with green onions and chili rings.
And there you have it—perfectly steamed, juicy, and healthy tefteli ready to be enjoyed! This dish is wonderfully versatile. Serve it with a side of fluffy quinoa, steamed vegetables, or a fresh green salad for a complete and balanced meal. For a touch of creaminess, a dollop of Greek yogurt or a light sour cream-dill sauce makes a fantastic accompaniment. Feel free to experiment with different herbs and spices in the meat mixture to make it your own. We hope this recipe brings a touch of wholesome comfort to your table. Enjoy every bite!
