Ingredients for Stuffed Peppers with Minced Meat without Rice

  • 650 g sweet bell peppers
  • 600 g homemade-style minced meat (a mix of pork and beef is traditional)
  • 120 g carrots
  • 150 g onions
  • 80 g tomato purée
  • 6 g seasoning for minced meat
  • 7 g ground sweet paprika
  • vegetable oil, black pepper, table salt

How to Make Stuffed Peppers with Minced Meat without Rice

Finely chop a large onion and add it to a pan with heated vegetable oil. To prevent the oil from burning and giving the food an unpleasant smell, use a refined, odorless oil (suitable for frying).

Sauté the onion for a few minutes, stirring occasionally.

For the filling, use chilled homemade-style minced meat, which is typically half pork and half beef. Minced chicken fillet also works well.

Season the meat with spices — ground sweet paprika and a dried seasoning for minced meat (a pre-made spice blend), or dried herbs like parsley, dill, or celery.

Let the sautéed carrots and onions cool slightly, then set aside half of the vegetables. Add the other half to the minced meat and mix well. At this stage, season the filling with salt and pepper.

Cut colorful sweet bell peppers in half lengthwise. Leave the stems on, but remove the seeds, then rinse the peppers under running water. You can also stuff peppers by cutting off the tops and filling them like cups, but this method doesn’t always work well, especially if the peppers have pointed ends, making them difficult to stand up on a baking sheet.

Fill the pepper halves with the minced meat mixture, packing it in tightly and mounding it slightly on top.

To the remaining sautéed vegetables, add tomato purée, salt, and pepper. Heat over medium heat until it comes to a boil. Instead of ready-made tomato purée, you can blend a few fresh tomatoes.
