How to Make Oven-Fried Potatoes

You can use any type of potato for frying—new, old, mealy, or starchy varieties all work well. It’s best to choose large tubers, as they are easier to slice.

So, peel the potatoes and immediately place them in a bowl of cold water to prevent them from browning.

Slice the potatoes into uniform pieces. There are many gadgets for slicing, one of which is a vegetable grater with interchangeable attachments – it’s fast, convenient, and all the slices come out perfectly even.

Place the sliced potatoes back into a bowl of clean, cold water to wash off the starch. Rinse them several times, then drain in a colander.

Bring a large pot of water to a boil. Add the sliced potatoes to the boiling water. Do not add salt!

Cook for a few minutes, depending on the thickness of the slices. Then, drain the parboiled potatoes in a colander and let the water run off completely.
