Place the chilled ground pork in a bowl. By the way, the meat for kotlety (meat patties) shouldn’t be ground too finely; it’s better to use a grinder plate with medium-sized holes.

Finely chop the onion in a blender or grate it on a coarse vegetable grater. If the onion for the patties is not fried before being added to the mince, it needs to be very finely chopped. Add the grated onion to the meat.

Cut the crusts off the stale white bread, and soak the crumb in half of the cold milk. Use your hands to mash the bread into a fine crumb. Add the soaked bread crumb to the meat and onion.
