Do you love homemade oladi (thick, fluffy Eastern European pancakes)? Hardly anyone can resist these golden, piping-hot treats, as they instantly create a sense of warmth and comfort. For a leisurely morning, these fluffy blueberry oladi are a true culinary masterpiece—soft as a cloud, they literally melt in your mouth. Sweet blue berries burst as they cook, infusing the airy batter with juice, while a delicate aroma of vanilla immediately fills the entire kitchen. Best of all, making these pancakes with kefir (a fermented milk drink similar to cultured buttermilk) is so simple that even a beginner cook can easily master them.

Tender homemade oladi with juicy blueberries, gently dusted with powdered sugar. The perfect breakfast for the whole family!
Ingredients
- 150 g (approx. 2/3 cup) kefir (fermented milk drink, or substitute thick cultured buttermilk)
- 1 large egg
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 tablespoon neutral vegetable oil
- 160 g (approx. 1 1/4 cups) all-purpose wheat flour
- 1/2 teaspoon baking powder
- vanilla powder or vanilla extract, to taste
- 100 g (approx. 2/3 cup) fresh blueberries
- vegetable oil, for frying
- powdered sugar, for serving
For the Sweet Yogurt Sauce
- 1 cup Greek yogurt
- 2–3 teaspoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions
Pour the kefir (fermented milk drink, similar to thick cultured buttermilk) into a deep bowl. Crack in the egg, then add the salt, sugar, and baking soda. Whisk the ingredients together. In this recipe, the baking soda is essential to neutralize the acidity of the kefir. If the kefir is slightly over-fermented, the oladi (thick Eastern European pancakes) will turn out sour, and sour batter does not taste good! By the way, any cultured dairy product works well in this recipe—you can mix low-fat smetana (sour cream) with water in a 1:1 ratio, or use sweetened or unsweetened yogurt, or ryazhenka (baked fermented milk).

Whisk the kefir with the egg, salt, sugar, and baking soda. The baking soda neutralizes the acidity of the kefir, making the finished pancakes incredibly tender.
Pour in the neutral-flavored vegetable oil. You can substitute butter for the vegetable oil; simply melt the butter, let it cool slightly, and then add it to the kefir mixture.

Pour in the vegetable oil. This makes the batter texture more elastic and the pancakes themselves soft and airy.
Add the baking powder to the wheat flour, then combine the dry ingredients with the wet mixture. Flavor the batter with vanilla extract or add half a teaspoon of vanilla powder.

Sift the flour and baking powder directly into the bowl. For a lovely aroma, you can add a pinch of vanilla powder.
Mix the batter for a few minutes until it is completely smooth and lump-free. Rinse the fresh blueberries under running water in a colander and pat them dry. Pour the blueberries into the bowl with the batter. You can also make these with frozen berries, though they will behave differently as they thaw and tint the batter purple.

Add ripe blueberries to the batter. It is best to use fresh berries so they don't tint the delicate batter purple.
Fold the blueberries into the batter. Let it rest for 10 minutes. You can also leave it in the refrigerator for several hours—just give it another gentle stir before frying.

Gently fold the batter with a spoon and let it rest for about 10 minutes at room temperature before cooking.
Heat a heavy-bottomed skillet well and pour in some refined, neutral-flavored vegetable oil. Spoon the batter into the pan, using one tablespoon per pancake. Fry over medium heat until golden brown, then flip and cook on the other side for a few more minutes. If you press the center lightly with your finger and the batter springs back, the oladi are cooked through and ready to be removed from the skillet.

Fry the pancakes over medium heat on both sides until beautifully golden brown and springy to the touch.
Transfer the cooked pancakes onto paper towels first so the paper absorbs any excess oil.
Serve the fluffy blueberry oladi hot, dusted with powdered sugar through a fine-mesh sieve or simply sprinkled with granulated sugar. Enjoy!

Before serving, garnish our fluffy pancakes with powdered sugar through a fine-mesh sieve. Be sure to serve them hot!
To accompany this dish, I recommend making a quick and incredibly creamy sweet yogurt sauce. You will need one cup of thick Greek yogurt, 2–3 teaspoons of brown sugar, half a teaspoon of ground cinnamon, and one teaspoon of pure vanilla extract. Simply blend all the ingredients until smooth and chill well in the refrigerator before serving. The cool, spiced sauce creates a wonderful contrast when served alongside hot, fluffy blueberry oladi, and a cup of freshly brewed herbal tea or an aromatic cappuccino will harmoniously complete this breakfast.
If you happen to have a few pancakes left over after a family breakfast, don't worry—they retain their softness beautifully. Store them in an airtight container in the refrigerator for up to two days, and before serving, warm them gently in a dry covered skillet or in the microwave to restore their original fluffiness. As a fun culinary experiment, you can try substituting wild bilberries for the regular cultivated blueberries, or add a bit of finely grated lemon zest to the batter—the bright citrus note will wonderfully highlight the berry flavor.
