  • 1 tbsp honey

How to Cook Oven-Roasted Pork Slices (Podzharka)

Cut the podzharka (a Russian term for pan-fried or roasted meat slices, often pork) into slices about two centimeters thick. This time, my meat came with rib cartilage and skin, but since the pig was young, the skin is edible and soft, and the cartilage is tender.

Now, let’s make the spice rub for the meat. In a bowl, combine salt and sweet paprika, then add caraway seeds, fennel, and a bit of dry meat seasoning. By the way, a seasoning blend for shashlik (kebab) would also work well.

Rub the pork slices thoroughly with the spices, making sure no part is left uncoated.

Drizzle everything with vegetable oil; you’ll need 2-3 tablespoons.

Arrange the meat in an oven-safe baking dish. Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit).

Cover the dish with a sheet of foil and place it in the preheated oven for 30 minutes. Then, remove the foil and brush the meat with the sauce. I prepare the sauce by gently heating honey in a small bowl over a water bath until it becomes liquid, then I mix in thick soy sauce.
