How to cook pork ribs in a pot with pumpkin and mushrooms
Cut the pork ribs along the bones into individual pieces. Place the cut ribs in a deep bowl, pour in the soy sauce and balsamic vinegar, add the chili powder and cane sugar, and mix thoroughly. Then, add the olive oil, cover the bowl with plastic wrap, and refrigerate on the bottom shelf for 3 hours.
The meat must marinate for at least one hour.
Once the ribs are marinated, you can assemble the individual pots.
Peel and finely chop the onions. Grease the inside of the clay pots with vegetable or olive oil.
Sprinkle the chopped onion on the bottom – this is the first layer of the stew.
On top of the onion, place 4-5 pork ribs per serving, depending on the size of the ribs and the appetite of your guests.
Wash the fresh champignon mushrooms. Cut the larger mushrooms into 2-4 pieces, and leave the smaller ones whole.
Add a layer of mushrooms on top of the meat.
Peel a ripe pumpkin with bright orange flesh, remove the seed pocket and seeds. Dice the flesh and place it on top of the mushrooms.
Next, add coarsely chopped potatoes.
Now, add the seasonings – dried carrots, sweet ground paprika for color and aroma, place 2 bay leaves in each pot, add a few black peppercorns, and table salt to taste.
Cover the pork ribs in the pots with white cabbage leaves; this will prevent the stew from burning on top.
Pour 100 ml of cold water or meat broth into each pot, and gently shake the contents to distribute the salt and spices evenly.
Place the pots with pork ribs on the middle rack of the oven. Gradually heat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Cook the pork ribs in pots with pumpkin and mushrooms for 1 hour and 20 minutes.
Serve the pork ribs hot, garnished with parsley and freshly ground black pepper.
And there you have it – a beautiful, aromatic, and deeply satisfying meal served straight from the oven in charming individual pots. The cabbage leaf on top not only prevents burning but also steams the ingredients, locking in all the juices and flavors. For an extra touch of richness, you can serve this dish with a dollop of sour cream or Greek yogurt. We hope you enjoy the process of creating this wonderful dish and the joy of sharing it with your loved ones. It’s more than just a recipe; it’s an experience that brings comfort and warmth to the table.
