How to make zucchini fritters with walnuts and chicken
Grate the zucchini on a coarse grater, keeping the skin on. Young zucchini can be eaten whole and raw, while mature ones should be peeled. If using an older zucchini, cut it lengthwise, scoop out the seeds and spongy center with a spoon, peel it, and then grate it just like the young ones. You can save the peels to add to your chicken or meat broth, or use them to make vegetable stock.

Grate the young zucchini with the skin on to preserve maximum nutrients and the vegetable's texture.
Dice a small onion. Add the chopped onion to the grated zucchini.
Crack in a large egg. Add salt and mix thoroughly. The salt will draw moisture from the zucchini and onion—there is no need to squeeze it out. It is much better to thicken these nutritious vegetable juices with rice flour.
Add the rice flour to the bowl. Do not confuse rice flour with rice starch; they are entirely different products. If you do not have rice flour and gluten-free is not a requirement, you can substitute it with wheat flour, though you might need a slightly larger amount.

Rice flour perfectly thickens the vegetable juices, making the texture of the fritters more delicate.
Mix the vegetables and flour well. Set the mixture aside for a while to allow the flour to hydrate and absorb the moisture from the vegetables.
Rinse the walnuts with cold water and pat them dry. Crush the nuts in a mortar or roll them into fine crumbs with a rolling pin on a cutting board.
Fold the crushed walnuts into the batter.
Finely chop the cooked chicken and add it to the other ingredients. You can easily replace the chicken with cooked sausage, meat, hot dogs, or ham. Leftovers from yesterday’s roast chicken or a piece of slightly dried cheese work wonderfully here, too.
Mix the batter thoroughly. Pour 2 to 3 tablespoons of refined vegetable oil into a skillet for frying. Heat the oil. Divide the batter into four roughly equal portions and drop them into the hot oil. Fry over medium heat until golden brown.
Flip the fritters. At this stage, I recommend covering the skillet with a lid. Fry the zucchini fritters on the other side until golden, then leave them covered over the lowest heat for a couple of minutes to cook through completely.
Arrange a few fresh lettuce leaves on a plate. Place the zucchini, walnut, and chicken fritters on top of the greens. Serve immediately with sour cream or a yogurt sauce.
Yogurt sauce: 50 g Greek yogurt, 50 g mayonnaise, 1 small fresh cucumber, 1 tablespoon chopped fresh parsley, salt, and black pepper. Grate the cucumber, mix all the ingredients together, and season with salt and pepper to taste.
To make your zucchini fritters with walnuts and chicken look as appetizing as possible, serve them on a bed of fresh lettuce leaves. A homemade yogurt sauce with cucumber and herbs is the perfect accompaniment, highlighting the freshness of the vegetables and softening the fried crust. If you have leftover fritters, they will beautifully retain their flavor in the fridge until the next day; just warm them slightly in a dry skillet under a lid to restore their tenderness. For those who love to experiment, try swapping the chicken for turkey or folding a little grated hard cheese into the batter for a stretchier consistency. You can also lightly toast the walnuts in a pan before crushing them—this will amplify their aroma and add depth to the dish. Remember, the secret to the perfect fry lies in moderate heat and the essential use of a lid during the final cooking stage to ensure the chicken inside stays exceptionally juicy.
