Juicy oven-baked meatballs are the ultimate solution for anyone who appreciates homemade comfort food but doesn't want to spend hours standing at the stove. The combination of lean chicken breast and pork with just a touch of fat strikes the perfect balance, ensuring these little bites remain tender and hold their shape beautifully while baking. The aroma of fresh celery and the subtle kick from the green adjika (spicy chili paste) infuse the dish with a deep flavor, transforming standard ground meat into a genuinely delightful meal. Baking them in the oven helps maintain their neat, round shape and achieves an appetizing crust without excessive oil, making this an excellent choice for a light yet satisfying lunch or dinner.

Appetizing homemade meatballs baked to a golden crust make the perfect companion to smooth, creamy mashed potatoes.
Ingredients
- 500 g chicken breast fillets
- 500 g lean pork
- 80 g onion
- A few sprigs of celery
- 100 g water
- 1 teaspoon raw green chili adjika (spicy chili and herb paste)
- Salt, to taste
- Neutral cooking oil
How to Make Baked Meatballs
Dice the onion. Remove the chicken breast fillets from the bone, discarding the skin as we won’t need it. Trim the pork, removing any tough silver skin or excess fat, but keep some thin layers of fat intact. A little fat is essential; otherwise, the meatballs will turn out dry. Cut both the chicken and pork into small cubes.

For incredibly juicy meatballs, we rely on a blend of lean chicken fillets and pork with just a little bit of fat.
Pass the chicken, pork, and onion through a meat grinder. Use a medium grinding plate so the mixture turns out relatively fine.
Finely chop the celery. Add 2-3 tablespoons of the chopped greens to the minced meat. Season with salt and pepper to your taste. Stir in a heaping teaspoon of raw green chili adjika (a spicy, herb-based chili paste).

Fresh green celery and chili adjika bring a vibrant aroma and a gentle, pleasant heat to the ground meat.
Pour in cold—preferably ice-cold—water. The water is crucial for juiciness and helps tenderize the meat fibers, making the mixture much easier to knead. You can easily swap the water for cold chicken broth or milk.

Ice-cold water is a crucial secret step—it softens the meat fibers and guarantees juicier finished meatballs.
Knead the mixture thoroughly. It’s best to do this by hand, almost like kneading dough. This ensures all the ingredients bind together evenly into a smooth mass. I highly recommend covering the bowl with plastic wrap and letting the mixture rest in the fridge for a couple of hours.
Divide the mixture into 12 equal portions. Lightly coat your hands with a neutral cooking oil. Roll the chilled mixture into round meatballs and arrange them on a cutting board.

Shape identical meatballs using lightly oiled hands—this prevents the mixture from sticking to your palms.
Line a baking sheet with silicone-coated parchment paper. To keep the paper from sliding around, dab a tiny drop of oil on both sides. Place the meatballs on the lined baking sheet, leaving a little space between each one.

Arrange the meatballs on the baking sheet with slight gaps between them to allow hot air to circulate evenly.
Preheat your oven to 175°C (350°F). Place the baking sheet on the middle rack of the preheated oven. Bake for 20 minutes. Halfway through the cooking time, rotate the pan 180 degrees—especially if you’re using a gas oven—to ensure they brown evenly.

Twenty minutes at 175°C (350°F) is all it takes for the meatballs to cook through completely while remaining incredibly juicy.
Remove the meatballs from the oven and let them rest for 10 minutes. Serve hot alongside creamy mashed potatoes, rice, or a crisp fresh vegetable salad, and garnish with some fresh herbs. Enjoy your meal!

The finished meatballs need to rest for 10 minutes before serving, allowing the juices to redistribute inside.
Beyond the classic pairing with creamy mashed potatoes, these baked meatballs are fantastic with a rich creamy mushroom sauce or a thick, basil-infused tomato gravy. If you want to keep things on the lighter side, serve them over a bed of blanched spinach or alongside roasted vegetables. For those who love a bit of culinary fun, try tucking a small cube of mozzarella into the center of each meatball when rolling them out—it creates a wonderful, gooey, cheesy surprise inside.
If you happen to have leftovers, they keep perfectly in the fridge for up to two days. To reheat them without losing any of that precious juiciness, place them in a baking dish, add a couple of spoonfuls of broth or water, cover tightly with foil, and warm them in a preheated oven for 5–7 minutes. This method brings back their original aroma and tenderness, making them taste as if they were freshly baked.
