Our version, however, offers a lighter, healthier spin without sacrificing any of the flavor. By incorporating rolled oats for texture and hidden veggies like zucchini for moisture, we create incredibly tender and juicy pork patties. Baking them in the oven not only makes them healthier but also wonderfully easy to prepare. Served with sweet, caramelized baby carrots, this dish is a complete, wholesome meal perfect for any night of the week.
Ingredients for Meat Patties with Rolled Oats and Vegetables
- 450 g lean pork
- 1 yellow onion
- 1/2 small zucchini
- a bunch of green onions and parsley
- 60 g gerkules (rolled oats)
- 5 g ground paprika
- 5 g dry seasoning blend
- 400 g baby carrots
- salt, pepper, olive oil
How to Make Delicious Meat Patties with Rolled Oats and Vegetables
Trim any sinews, tendons, and membranes from a piece of lean pork (if any), and cut the meat into small cubes.
Cut the yellow onion into several pieces.
Finely chop a bunch of green onions and parsley. Instead of green onions and parsley, you can use any herbs you like – cilantro, celery, dill, or lovage, in short, anything you think goes well with meat.
Peel half of a small zucchini and remove the seeds. Dice the zucchini flesh.
Place all the ingredients in the bowl of a food processor and blend until smooth. Alternatively, you can pass the ingredients through a meat grinder with a fine plate.
Next, add gerkules (rolled oats), ground red paprika, salt to taste, and dry seasonings to the ground meat mixture. I have a homemade blend of dill, bay leaf, and caraway – it’s very aromatic.
Mix the ground meat thoroughly, cover the bowl with plastic wrap, and refrigerate for 20 minutes. Meanwhile, preheat the oven to 200°C (400°F).
Grease a baking dish and your hands with olive oil. Form oval patties from the ground meat and place them in the dish with a little space between them. Press down on each patty with your palm to flatten it slightly. Take some baby carrots, trimming some of the tops. Brush the carrots with olive oil and arrange them in the gaps between the patties.
Place the dish in the preheated oven and bake for 10-12 minutes on one side, then remove the dish, flip the patties, and bake for another 10 minutes.
Serve the patties hot – these golden patties with caramelized carrots are absolutely delicious!
