How to Make Chicken Crackling Crepe Filling
I recommend making the batter for thin crepes in advance—ideally, mix it the night before and let it rest in the fridge. Crack the eggs into a bowl, add 1/2 teaspoon each of salt and baking soda, and 1 teaspoon of sugar. Whisk the eggs, then pour in the melted butter and milk. Gradually fold the wet ingredients into the flour in small batches.

Mix the batter ingredients. It is best to do this in advance to allow the gluten in the flour to relax.
