Instructions

Peel a large sweet-tart apple and grate it on the large holes of a box grater. If the apple begins to brown, I recommend sprinkling it with a little lemon juice to stop the oxidation process.

Slice the sausages into rounds just under 1/4 inch (about 4 mm) thick, and place them in the salad bowl. I use lean, firm chicken sausages (similar to high-quality frankfurters or hot dogs) for this recipe, which have a great bouncy texture like good bologna.

To make your sausage salad absolutely perfect, pay attention to selecting the main ingredient—the sausages should be firm and high quality; lean poultry or beef varieties work best. If you want to experiment, try swapping the mayonnaise for a mix of sour cream (smetana) and mustard for a lighter flavor, or toss in a handful of croutons right before serving to add an extra layer of crunch. For a festive table, you can plate the salad using a food ring, garnishing the top with pomegranate seeds along with the bell pepper. Keep in mind that this sausage salad is best eaten immediately after making it, as the grated apple and pickles quickly release their juices, which can make the texture overly watery.
