How to Make Individual Chicken and Potato Foil Packets
Cut two fillets from a chicken breast, slicing them about half an inch (1 cm) thick. Rub the chicken with salt or poultry seasoning.
Peel the potatoes, slice them paper-thin, and place them in a bowl of cold water. Rinse thoroughly, drain in a sieve, and let the excess water drip off.
Place the dried potato slices into a bowl, sprinkle with salt or dried herbs, and drizzle with olive oil.
Assemble the dish in individual portions. Place two 8×10 inch (20×25 cm) sheets of foil on a baking sheet. If the foil is thin, fold it into a double layer. Arrange a thin, overlapping layer of potato slices on the foil.
Slice the onion into thin rings and scatter them over the potatoes.
Dice the bell pepper. One tablespoon per portion is plenty. If you prefer spicy food, swap the bell pepper for a chili pepper.
Place the seasoned chicken fillets on top of the vegetables.
