Ingredients for the stew:
- 400 g chicken breast
- 150 g leek
- 150 g bell pepper
- 150 g carrots
- 1 chili pepper
- 3 garlic cloves
- 150 ml smetana (a high-fat Eastern European sour cream)
- 15 g all-purpose wheat flour
- 25 ml olive oil
- salt, ground pepper
For the side dish:
- 180 g white rice
- 20 g butter
- 200 g cauliflower
- 200 g broccoli
How to Make Chicken Stroganoff with Leek, Rice, Broccoli, and Cauliflower
Take a large chicken breast, remove the skin, and cut the meat off the bone. Slice the fillet into plates about a centimeter thick. Place them between two sheets of plastic wrap and lightly pound them. Then, slice into strips about half a centimeter wide against the grain.
Heat refined olive oil in a frying pan and sauté the chicken until golden brown (about 5 minutes).
Slice the light part of the leek into rings. Crush the garlic cloves with a knife. Finely chop the chili pepper, after removing the seeds and membranes.
Push the meat to one side of the pan, add the garlic cloves first, and after 1-2 minutes, add the leek. Sauté the leek for 3-4 minutes.
Add thinly sliced carrots to the chicken. To speed up the cooking process, you can grate them on a coarse grater.
A sweet bell pepper will add aroma to the stew: clean it of seeds, dice the flesh into small cubes, and add to the other ingredients. Cook the vegetables with the chicken over high heat without a lid for 7 minutes.
Measure out the wheat flour and mix it with smetana (a high-fat Eastern European sour cream) until you get a smooth, lump-free mixture, adding a little cold water if necessary. Pour the smetana sauce into the pan and bring to a boil.
By the way, you can replace the flour with cornstarch if you want to make a gluten-free dish.
Cook the stew over low heat without a lid for 8 minutes. Season with salt and freshly ground black pepper to taste.

Be sure to rinse the rice with cold water several times until the water runs clear. Then, pour 200 ml of water into a small saucepan, add a piece of butter and 4 g of salt. Add the rice, and after it comes to a boil, cook covered over low heat for 15 minutes.
On a plate, place a layer of rice, top with the Chicken Stroganoff, then add the broccoli and cauliflower. Sprinkle everything with leek rings and serve immediately.
