Scrub the potatoes and carrots, place them in a pot, and cover with boiling water. Boil in their jackets (skins on) until tender, then let cool and peel. Alternatively, wrap the vegetables in foil and roast for 30 minutes in an oven preheated to 200°C (400°F).
